    Place the eggs in a medium saucepan and cover them with cold water.

    Bring the water to a boil, then immediately take the pan off the heat.

    Cover and let the eggs sit in the hot water for 10 to 12 minutes.

    Remove the eggs from the hot water, cool them, and peel.

    Cut the eggs in half.

    Remove the yolks and place them in a medium bowl.

    Mash the yolks with the celery, onion, mayonnaise, salt, and hot pepper sauce.
