    Assemble all your ingredients.

    In a 2-quart saucepan over low heat, warm the sugar, corn syrup, and water; stir constantly until the sugar dissolves and the mixture starts to boil. Keep cooking without stirring until it reaches 250 degrees F (120 degrees C), or until a small amount of syrup dropped into cold water forms a hard ball.

    In a 1 1/2-quart glass, metal, or ceramic bowl, beat the egg whites until stiff peaks form.

    Keep beating while gradually pouring the hot syrup in a thin stream into the egg whites.

    Add the vanilla; beat until the mixture holds its shape and starts to lose its shine. Fold in the walnuts.

    Drop the mixture from a greased spoon onto waxed paper. Let stand at room temperature, turning the candy over once, until the outside is firm, at least 12 hours. Store in an airtight container.
