Preheat the oven to 375 degrees F (190 degrees C).

Place the butter in the bottom of a cast iron Dutch oven. Sprinkle the dry stuffing mix over the butter to cover the bottom of the pot. Set the pork chops on top of the stuffing layer. Pour the tomatoes over the pork chops.
