Preheat the oven to 300 degrees F (150 degrees C). Grease two 9x5-inch loaf pans. In a medium bowl, mash the bananas and stir in the eggs until well combined. Set aside.

In a large bowl, beat the shortening and gradually add the sugar. Stir in the vanilla and the banana mixture. Whisk together the flour, baking soda, and salt; mix this into the batter. Add walnuts if desired. Divide the batter between the prepared pans.
