Easy Beet Chips

    Using a mandoline, slice the beets thinly to about 1/16-inch thick. Put the beet slices in a bowl, add salt, and toss to mix. Let the beets sit for about 30 minutes. Drain off the excess liquid.

    Preheat the oven to 300 degrees F (150 degrees C). Line 2 baking sheets with parchment paper.

    Drizzle olive oil over the beets and toss to coat. In a small bowl, combine garlic powder, black pepper, and dill; sprinkle over the beets and toss to coat. Arrange the beet slices on the baking sheets in a single layer.

    Bake in the preheated oven until crispy, 40 to 50 minutes. Sprinkle with more salt, if desired.
