    Heat oil in a large skillet over medium heat until hot. Add the onion and cook, stirring, until soft and golden brown, 5 to 8 minutes.

    Gradually stir in the curry powder until evenly combined.

    Add the chicken; reduce the heat to low, cover, and cook until the chicken is no longer pink in the center and the juices run clear, 20 to 40 minutes. An instant-read thermometer inserted into the center should register at least 165 degrees F (74 degrees C).

    Uncover and cook, stirring constantly to prevent burning, until the pan juices reduce to the desired amount, 3 to 5 minutes.
