    Preheat the oven to 375 degrees F (190 degrees C).

    Rub the leg of lamb all over with salt and pepper. Make punctures about 1 inch apart using a small knife. Press slivers of garlic into each hole, pushing them about 1/2 inch below the surface. Place the lamb in a roasting pan. Either strip the rosemary from the stalk and sprinkle and rub it over the lamb on all sides, or use the string from the lamb to secure it. Pour the tomato sauce over the lamb.

    Bake in the preheated oven for 45 minutes. Reduce the temperature to 325 degrees F (160 degrees C); continue roasting for about 15 minutes, or until an instant-read thermometer inserted in the center reads at least 130 degrees F (54 degrees C). If you prefer the meat well-done, keep cooking until an instant-read thermometer inserted in the center reads at least 150 degrees F (65 degrees C).
