Set-It-and-Forget-It Slow Cooker Beef Stew

    Put the meat in a large plastic bag. Mix 1/4 cup flour with the salt in a small bowl; pour it into the bag and shake to coat the meat.

    Heat the olive oil in a large skillet over medium-high heat. Add the floured meat and cook, in batches if needed, until evenly browned on the outside. Move the meat to a slow cooker.

    Melt the butter in the same skillet. Add the onions and cook until softened. Transfer them to the slow cooker.

    Pour the red wine into the skillet and stir to loosen any browned bits from the bottom. Take it off the heat and pour it into the slow cooker.

    Add the potatoes, carrots, parsley, and pepper to the slow cooker. Stir 2 cups boiling water and the dry soup mix together in a small bowl; pour it into the slow cooker.

    Cover and cook on High for 30 minutes.

    Lower the heat to Low and cook for 6 hours, or until the meat is tender enough to pull apart with a fork.

    Mix 1/4 cup warm water with 2 tablespoons flour in a small bowl; stir it into the stew and cook, uncovered, until thickened, about 15 minutes.
