Weeknight Tamale Pie

    Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch baking or casserole dish with butter.

    Heat a large skillet over medium-high heat. Cook and stir the ground beef and the onion in the hot skillet until the beef is browned and crumbly, 5 to 7 minutes. Stir in the corn, tomatoes, oil, chili powder, and cumin. Bring to a boil, then remove from the heat.

    In a large bowl, combine the milk, cornmeal, and eggs. Stir in the meat mixture. Mix in the olives. Pour into the prepared baking dish.
