    Preheat the oven to 350 degrees F (175 degrees C). Coat a 12-cup muffin tin with nonstick cooking spray.

    Lay a thin layer of potato slices in the bottom of each muffin cup. Place a little butter on top.

    Bake in the preheated oven for 5 minutes.

    In a large bowl, mix the eggs, bell pepper, tomato, spinach, ham, and onion. Ladle the egg mixture over the warm potatoes. Place a mozzarella cube on top of each muffin cup.
