Spinach & Feta Egg White Bites

    Preheat the oven to 350 degrees F (175 degrees C). Generously coat a 12-cup muffin pan with cooking spray.

    Add the egg whites, cottage cheese, garlic powder, salt, and pepper to a blender; blend until smooth, about 15 seconds.

    In a bowl, combine the spinach, roasted red peppers, and basil. Pour in the egg mixture and stir to mix.

    Use a ladle to divide the mixture evenly among the muffin cups, filling each about 3/4 full.

    Sprinkle 1 teaspoon feta cheese on top of each muffin.

    Bake in the preheated oven until the egg white bites are set, 18 to 20 minutes.
