    Put the chicken gizzards in a large saucepan and add enough water to cover them. Simmer over low heat until tender, about 30 minutes.

    While the gizzards simmer, combine the onion, bell pepper, garlic, vinegar, oil, bay leaves, olives, and peppercorns in a large bowl. When done, drain the gizzards and add them to the bowl. Season with salt to taste and marinate for at least an hour in the refrigerator.
