Fajita Cheeseburger

Mix chili powder, paprika, cayenne, cumin, oregano, garlic powder, and onion powder in a small bowl; set aside until needed.

Form the ground beef into a burger as thick as you like, preferably thinner to increase surface area, and season both sides generously with salt and pepper. Refrigerate until needed.

Melt the butter with the olive oil in a skillet over medium-high heat. When the butter starts to sizzle, add the burger. Add the jalapeno, tomato, and red onion around the burger, arranging the vegetables so they all contact the pan. Season the vegetables with salt to taste.

Cook the burger for about 3 minutes, then generously sprinkle the fajita spice mixture over the burger and vegetables.

Turn the burger and vegetables once their edges begin to brown. Generously sprinkle fajita spice over the burger and vegetables, and cook until the burger is no longer pink in the center, about 4 minutes more. An instant-read thermometer inserted into the center should register at least 160 degrees F (70 degrees C). If the vegetables finish before the burger, transfer them to a plate and keep warm.

Meanwhile, spread the bun inside and out with mayonnaise and toast it in a dry pan over medium-high heat until golden brown on both sides, about 3 minutes.

When the burger is almost done, top it with a slice of cheese. Let it cook for about 30 seconds. Pile the fajita vegetables over the cheese. Serve on the toasted bun with a lime wedge.
