    Assemble all the ingredients.

    Warm 2 teaspoons oil in a 10-inch skillet over medium heat. Add the onion and bell pepper; cook and stir until softened, 5 to 10 minutes. Season with salt and move to a bowl.

    Brush one side of each tortilla with the remaining oil. Set one tortilla, oiled side down, in the same skillet; top with 1/2 the steak, 1/2 the onion mixture, and 1/2 the Mexican cheese mixture.

    Place a second tortilla, oiled side up, over the cheese layer, pressing down with a spatula to seal.

    Cook the quesadilla over medium heat until the cheese melts and the tortillas are browned, 3 to 4 minutes per side.

    Take the quesadilla out of the skillet and cut it into wedges. Repeat with the remaining ingredients for the second quesadilla.
