Firecracker Chicken Meatballs
Firecracker Chicken Meatballs pack a punch with juicy chicken baked until tender and finished in a glossy sweet-heat glaze. The balance of brown sugar, hot sauce, and warm spices creates a sticky, spicy bite perfect for game day spreads or serving over rice for dinner. Expect a lively kick, subtle ginger and garlic notes, and a finger-licking finish.

Gather all ingredients. Preheat the oven to 475 degrees F (245 degrees C). Line a large baking sheet with foil and lightly coat it with cooking spray.
- 2
In a large bowl, stir together the egg, jalapeño, soy sauce, onion powder, ginger, garlic, and pepper. Add the ground chicken and breadcrumbs, and gently mix just until combined.
- 3
Use a 2-tablespoon cookie scoop to portion the mixture into meatballs; shape them with wet hands. Place them on the prepared baking sheet.
- 4
Bake in the preheated oven until the centers are no longer pink, 8 to 10 minutes. An instant-read thermometer inserted in the center should register at least 160 degrees F (71 degrees C).
- 5
Meanwhile, for the firecracker sauce, combine the hot sauce, brown sugar, soy sauce, vinegar, Worcestershire, and red pepper flakes in a saucepan over medium-high heat. Bring to a boil, then reduce to a simmer. Cook for about 5 minutes, stirring occasionally, then remove from the heat to cool; the sauce will thicken slightly as it cools.
- 6
Dip each meatball into the sauce or brush each meatball with the sauce, return them to the baking sheet, and cook for an additional 1 to 2 minutes.
- 7
Drizzle or brush with more sauce as desired, sprinkle with chopped parsley, and serve. Serve the remaining sauce on the side for dipping.
