    Preheat the oven to 450 degrees F (230 degrees C). Lightly coat a large baking sheet with cooking spray.

    Stretch the pizza dough into a rough rectangle, about 8 inches long, and place it on the prepared baking sheet.

    Bake in the preheated oven until the dough is mostly cooked and starting to brown, 10 to 14 minutes.

    Meanwhile, preheat an outdoor grill to high heat and lightly oil the grate.

    At the same time, heat a medium skillet over medium-high heat. Add the sausage and cook, breaking it up with a spoon, until browned and crumbly, about 10 minutes. Transfer to a paper towel-lined plate.

    While the sausage cooks, arrange the peach slices in a single layer on the preheated grill. Grill for 8 minutes, flipping once halfway through. Remove and set aside.

    While the peaches grill, take the dough out of the oven. Spread the ricotta cheese evenly over the top. Scatter the garlic slices over the ricotta and season with salt and pepper. Arrange the cooked sausage on top.

    Return to the oven until the toppings are heated through and the crust finishes cooking, about 5 more minutes.

    Top the flatbread with the grilled peaches, arugula, and microgreens.
