    Assemble all the ingredients.

    Place 8 tortillas flat on a work surface.

    Mix beef, taco seasoning, and 1/2 teaspoon salt in a medium bowl.

    Spread 1/4 cup of the beef mixture onto one half of each tortilla.

    Heat 1/4 inch of oil in a high-sided skillet over medium heat until it shimmers. Working in batches, carefully lay one taco at a time, flat, into the hot oil.

    Using tongs to hold the empty side of the tortilla, fold it over the beef filling once the shell softens, about 5 seconds.

    Cook, turning once, until the shell is golden brown and the beef is no longer pink in the center, 30 seconds to 1 minute per side. An instant-read thermometer inserted into the center should register at least 160 degrees F (70 degrees C).

    Move tacos to a paper towel-lined plate and sprinkle with the remaining 1/4 teaspoon salt.

    Serve right away topped with onion and cilantro. Serve with lime wedges, salsa, and hot sauce.
