Garlic Mashed Potatoes

    Place the potatoes, garlic, and 1 tablespoon of the salt in a medium saucepan and add enough water to cover them by 1 inch. Bring to a boil over high heat, then reduce to medium-low and simmer until the potatoes are fork-tender, 10 to 12 minutes.

    Drain the potatoes and return them to the hot saucepan. Stir until they are dry, about 1 minute.

    Add the butter, 1 piece at a time, gently stirring until each piece melts before adding the next.

    Use a potato masher to mash in the milk until smooth. Stir in 1 teaspoon salt and the white pepper.
