Buttery Garlic Naan Flatbread is tender and chewy with a pleasant tang from yogurt and a rich finish of melted garlic butter. Mix the water, sugar, and yeast in a bowl. Let sit until the yeast softens and develops a creamy foam, about 15 minutes.

Melt the butter in a pan over medium heat until it sizzles. Quickly stir in the garlic, then remove from the heat.

Add the bread flour, yogurt, salt, and 1 tablespoon garlic butter to the yeast mixture; stir with a wooden spoon until a shaggy dough forms. Knead by hand until the dough pulls away from the sides of the bowl, adding more water or flour as needed. Turn the dough out onto the counter and keep kneading until it becomes a smooth ball, 3 to 4 minutes.

Place the dough in a large bowl and drizzle a few spoonfuls of garlic butter over the top. Cover and let rise until doubled in size, about 2 hours.

Punch down the dough and turn it out onto the counter. Shape it into a rough rectangle and cut into 6 pieces. Roll each piece into a ball and lightly dust with flour. Cover with plastic wrap and let proof until just puffy, 15 to 20 minutes.

Preheat a cast iron skillet over medium heat until very hot, 5 to 10 minutes.

Meanwhile, roll each piece of proofed dough into an oval about 1/8 inch thick. Sprinkle some cilantro on top and press lightly so it sticks.

Working in batches, cook the naan in the hot skillet until large bubbles form, 1 to 2 minutes. Flip, press gently, and cook until the bubbles on the bottom are charred, 2 to 3 minutes more.

Brush the naan with more garlic butter before serving.
