    Combine the sugar, corn syrup, and water in a saucepan over medium-high heat.

    Stir just to combine, then bring the mixture to a boil.

    Cook until the temperature reaches 250 to 265 degrees F (121 to 129 degrees C), or until a small amount of syrup dropped into cold water forms a rigid ball.

    Meanwhile, beat the egg whites with an electric mixer until foamy.

    Sprinkle in the gelatin powder and continue beating until peaks form when the beaters are stopped and lifted.

    When the syrup reaches the target temperature, pour it in a thin stream into the egg white mixture while mixing constantly on low speed.

    Once all the syrup is added, increase to high speed and whip until the candy is stiff and no longer glossy.

    Fold in nuts, spread the mixture into the prepared pan, let it stand until firm, then cut into squares.
