In a medium saucepan, combine the brown sugar and evaporated milk. Cook over medium-high heat, stirring to dissolve the sugar. When it starts to boil, attach a candy thermometer to the side of the pan.

Cook until the temperature reaches 232 degrees F (112 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when lifted out and set on a flat surface.

Take the pan off the heat and stir in vanilla with a sturdy wooden spoon.

Add butter and pecans, and keep stirring until the mixture is thick and creamy and loses some of its shine.

Drop spoonfuls onto waxed paper and let cool at room temperature until set.
