Gnocchi in Fontina Sauce

    Bring a large pot of lightly salted water to a boil.

    Cook the gnocchi in the boiling water until tender, about 5 minutes.

    Drain.

    As soon as the gnocchi goes into the boiling water, begin the sauce: Melt the butter in a saucepan over medium heat.

    Add the shallots and cook until tender, about 3 minutes.

    Stir in the cream and heat it until it is almost boiling.

    Gradually add the Fontina and Parmesan cheeses, taking care not to let it boil.

    Stir until smooth, then take the sauce off the heat right away so it does not clump.

    Divide the gnocchi among serving dishes and spoon the sauce over the top.
