Granny's Okra Soup is a cozy Southern-style pot brimming with tender okra, tomatoes, lima beans, and potatoes, enriched with well-seasoned ground beef. It simmers until the broth turns robust and tomato-forward, with sweet corn and green beans adding pops of texture. Granny's Okra Soup
  1. 1

Combine tomatoes, lima beans, okra, potatoes, corn, green beans, carrots, and tomato paste in a large soup pot. Pour chicken stock over the mixture and bring it to a boil over medium heat. Reduce the heat and simmer until the vegetables start to soften, about 15 minutes.

  2. 2

Season the ground beef with garlic powder, celery salt, and onion powder. Set aside.

  3. 3

Heat butter in a skillet over medium-high heat. Add the onion and garlic when the butter stops bubbling, then cook and stir for 1 minute. Spread the ground beef evenly in the pan. Cook until it develops a good brown sear, stirring as little as possible to keep mostly medium-sized chunks, 5 to 7 minutes. Drain the skillet and add the beef, onions, and garlic to the soup pot.

  4. 4

Bring the soup mixture to a boil; reduce the heat to a simmer, cover, and cook until the vegetables and beef have cooked down, 1 to 2 hours.
