    Soak the rice in cold water, then drain. In a large bowl, mix the ground lamb, rice, allspice, salt, and pepper until well combined. Place about 1 tablespoon of the meat mixture in the center of each grape leaf. Fold the leaf over once, tuck in the sides, and roll it closed.

    Stack the rolled leaves in a large pot, covering each layer with slices of garlic. Add just enough water to cover the rolls, then pour in the lemon juice. Add the olives to the pot for flavor. Place a plate on top of the rolls to keep them submerged.

    Bring to a boil, then reduce the heat, cover, and simmer for 1 hour 15 minutes. Taste the rice to check doneness. The grape leaves are even better after sitting for several hours. Serve and enjoy.
