Grilled Cod

    Gather all ingredients.

    Stack about 15 charcoal briquettes in a pyramid inside the grill. If you like, lightly drizzle the coals with lighter fluid and let them soak for 1 minute before lighting them with a match. Let the fire spread to all the coals, about 10 minutes, then spread the briquettes out in the grill; let them burn until a thin layer of white ash covers the coals. Lightly oil the grates.

    Season both sides of the cod fillets with Cajun seasoning, lemon pepper, salt, and black pepper. Set the fillets aside on a plate.

    Melt the butter in a small saucepan over medium heat, stir in the lemon juice and green onion, and cook until the onion softens, about 3 minutes.

    Grill the cod fillets on the preheated grill until browned and flaky, about 3 minutes per side, basting frequently with the butter mixture while grilling.

    Let the cod rest off the heat for about 5 minutes before serving.
