Lemon-Garlic Dijon Grilled Chicken

    Mix lemon juice, olive oil, Dijon mustard, garlic, red bell pepper, salt, and pepper in a bowl.

    Reserve 1/4 cup of the marinade for basting.

    Add the chicken breasts to the bowl and stir to coat.

    Marinate in the refrigerator for at least 20 minutes.

    Preheat an outdoor grill to high heat and lightly oil the grate.

    Take the chicken out of the marinade and shake off the excess; discard the remaining marinade in the bowl.

    Grill the chicken on the preheated grill until it is no longer pink in the center, about 6 to 8 minutes per side, basting occasionally with the reserved marinade.

    Check with an instant-read thermometer inserted into the center; it should register at least 165 degrees F (74 degrees C).
