    Preheat the grill to medium-high and lightly oil the grate. Preheat the oven to 425 degrees F (220 degrees C).

    Toss the bell pepper and red onion with Italian dressing in a bowl. Grill the vegetables until tender with a slight bite, 5 to 8 minutes, turning occasionally. Let them cool slightly, then slice the peppers into thin strips and cut the onions into 3/4-inch pieces.

    Place the pita on the grill until grill marks appear, 30 seconds to 2 minutes; flip and grill the other side until grill marks appear, 30 seconds to 2 minutes.

    Set the pita on a sheet pan. Spread one side of the pita with olive oil and pizza sauce. Scatter the peppers, onion, mushrooms, and black olives over the pita, then sprinkle with mozzarella cheese.
