Moroccan Harira Soup
Moroccan Harira Soup balances tender lamb with earthy lentils and chickpeas in a warmly spiced tomato broth. In a large soup pot over low heat, combine the lamb, onions, celery, cilantro, margarine, pepper, turmeric, cinnamon, ginger, and cayenne. Cook, stirring often, for 5 minutes. Add the tomatoes (without the juice) and simmer for 15 minutes.

Add the water, the reserved tomato juice, and the lentils. Bring to a boil, then lower the heat, cover, and simmer for 1 hour 50 minutes.

Raise the heat to medium-high and add the garbanzo beans and vermicelli pasta. Cook until the noodles are tender but slightly firm, about 10 minutes. Stir in the eggs and lemon juice and cook for 1 minute.
