    In a medium bowl, mix the cornmeal, salt, and sugar. Add the boiling water and 1 tablespoon bacon grease; stir until the bacon grease melts.

    Pour bacon grease into a large skillet to a depth of 1/2-inch; heat to 375 degrees F (190 degrees C).

    Using a heaping tablespoon as a guide, shape the cornmeal mixture into 12 flattened balls.
