Irish Raisin-Currant Soda Bread

Breakfast 🍳Side Dish 🥗Snack 🍿 Irish Vegetarian 🥦

Irish Raisin-Currant Soda Bread bakes up tender with a lightly crisp crust and a gentle tang from buttermilk. Sweet pops of raisins and currants punctuate each slice, making it perfect for breakfast with butter, an afternoon snack, or a comforting side with tea. Its simple ingredients let the fruit shine without overpowering the classic soda bread character.

Irish Raisin-Currant Soda Bread
  1. 1

Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch cast iron skillet.

  2. 2

Pour hot water over the raisins and currants in a bowl and let them soak. In a separate bowl, whisk together the flour, sugar, salt, and baking soda until well mixed; whisk in the buttermilk.

  3. 3

Drain the raisins and currants and pat them dry with paper towels; fold them into the dough. Turn the dough out onto a floured work surface and knead gently until it holds its shape; if the dough is too sticky, knead in more flour. Shape into a round and place in the prepared cast iron skillet. Use a sharp knife to cut a cross on top of the loaf.

  4. 4

Bake in the preheated oven until golden brown and a slender knife inserted into the loaf comes out clean, about 1 hour.
