    Assemble all the ingredients.

    Add 1 1/3 cups warm water, olive oil, flour, brown sugar, salt, and yeast to the bread machine in the listed order, or follow your manufacturer's order if it differs. Run the Dough cycle, about 90 minutes.

    Dust a cutting board with cornmeal. Punch down the dough, turn it out onto a lightly floured surface, and shape it into two loaves.

    Set the loaves seam-side down on the cutting board; cover with a damp cloth and let them rise until doubled in size, about 40 minutes.

    Meanwhile, preheat the oven to 375 degrees F (190 degrees C).

    Whisk the egg with 1 tablespoon water in a small bowl; brush it over the risen loaves.

    With a sharp knife, make one quick, long slash down the center of each loaf.

    Gently shake the cutting board to ensure the loaves aren't sticking; if needed, use a spatula or pastry knife to loosen them. Slide the loaves onto a baking sheet with a swift but careful motion.

    Bake in the preheated oven until the loaves are golden brown and sound hollow when tapped on the bottom, 30 to 35 minutes.
