Jalapeno-Lime Chicken pairs bright citrus with a gentle chile kick for juicy, boldly flavored breasts. Fresh orange and lime juices mingle with cumin and garlic to create a tangy, aromatic finish that shines under the broiler. Serve it hot with yellow rice or a simple salad for a lively weeknight dinner.

Jalapeno-Lime Chicken
  1. 1

Whisk the orange juice, lime juice, cumin, garlic, and jalapeno pepper in a bowl, then pour the mixture into a resealable plastic bag. Add the chicken breasts, coat them with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 2 to 4 hours.

  2. 2

Preheat the oven broiler and position the oven rack about 6 inches from the heat source. Remove the chicken from the marinade and shake off the excess. Discard the remaining marinade. Place the chicken on a broiling pan.

  3. 3

Broil the chicken breasts until they are no longer pink in the center and the juices run clear, about 15 minutes. An instant-read thermometer inserted into the center should register at least 165 degrees F (74 degrees C).
