Jamaican Fried Snapper brings crisp, golden fish topped with a lively escovitch of tangy vinegar, sweet onions and carrots, and a gentle hit of heat from habanero. Fragrant thyme and allspice round out the bright, pickled vegetables for a bold, balanced bite. Serve hot for a vibrant weeknight dinner or as a centerpiece for a sunny weekend meal.

  1. 1

Pat the fish dry; make 3 small slits on each side. Season all over with salt and pepper.

  2. 2

Heat 1-quart of oil in a large skillet over medium-high heat until it begins to smoke. Fry the fish in the hot oil until browned and crisp, about 5 minutes per side. Remove the fish and set it on a paper towel-lined plate.

  3. 3

Heat 1 teaspoon of oil in a large skillet over medium-high heat. Add the onion, carrot, and garlic; cook and stir for 1 to 2 minutes.

  4. 4

Add the vinegar, water, salt, habanero pepper, thyme, allspice, and sugar; continue cooking until the liquid has reduced, about 5 minutes. Spoon the onion mixture over the fried fish to serve.
