Kifta
Kifta layers spiced ground beef with golden fried potatoes, juicy tomatoes, and onions for a warmly seasoned bake that’s tender inside and lightly browned on top. Aromatics like garlic, parsley, allspice, nutmeg, and cumin give it deep Middle Eastern character. Serve it hot over fluffy rice for a comforting family meal or a casual weekend dinner.

Preheat the oven to 350 degrees F (175 degrees C). Heat the oil in a large heavy skillet over medium-high heat. Once the oil is hot, add the potato slices in a thin layer and fry until just golden. Lift them out with a slotted spoon and drain on paper towels.

In a medium bowl, combine the ground beef, minced onion, garlic, parsley, salt, pepper, allspice, nutmeg, and cumin. Press the mixture evenly into a 7x11 inch baking dish. Lay the potato slices over the meat in an even layer. Arrange the tomato slices over the potatoes. Add slices of onion on top. Cover with aluminum foil.

Bake for 45 minutes in the preheated oven.

Remove the aluminum foil from the top, and bake for another 15 minutes, or until browned.

While the kifta cooks, combine the rice and water in a saucepan. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes or until the rice is tender.

When the kifta is done, cut it into squares and serve over the rice.
