Kokub's Pakistani Green Mango Chutney
Kokub's Pakistani Green Mango Chutney balances tart, under-ripe mango with a mellow sweetness, lifted by ginger, garlic, and a chorus of warm whole spices. Put the mangoes in a large pot. Crush the garlic and ginger with a mortar and pestle until smooth, then stir the paste into the mangoes. Mix in the sugar, then season with salt, cumin seeds, pepper flakes, cloves, cardamom seeds and pods, and the cinnamon stick. Stir to combine, cover the pot, and leave at room temperature for 8 hours to overnight.

The next day, cook the chutney over medium heat, stirring now and then, until it starts to thicken, about 30 minutes.
