Lighter Banana Muffins

    Preheat the oven to 350 degrees F (175 degrees C). Lightly grease or line 10 muffin cups.

    In a medium bowl, mix the eggs and bananas. In a separate bowl, combine the flour, salt, sugar, and baking soda. Stir the banana mixture into the flour mixture. Fold in the walnuts if desired. Pour the batter into the prepared muffin cups.
