Traditional Lithuanian Potato Kugelis

    Preheat the oven to 350 degrees F (175 degrees C).

    Place the bacon in a Dutch oven over medium heat. Cover and cook until the bacon starts to soften and release its fat. Add the onion and cook until it is soft and translucent. Remove the cover, then continue cooking until the mixture caramelizes and becomes a deep golden brown.

    Take the pot off the heat and stir in the butter until melted. Mix the shredded potatoes into the onion mixture. Add the evaporated milk and the eggs, and stir until thoroughly combined. Pour the mixture into a 9x13-inch baking dish.

    Bake in the preheated oven until bubbly and golden on top, about 1 hour. If the top browns too fast, cover it with foil. Remove from the oven and let stand for 10 minutes before slicing into 3x3-inch squares. Serve hot.
