Mabo Dofu
Mabo Dofu pairs tender tofu with savory ground pork in a gingery, garlicky sauce sparked by chili bean paste for gentle heat. Oyster sauce and soy lend depth and umami, while a splash of sake rounds it out; a shower of green onion brightens each bite. Serve it hot over steamed white rice for a satisfying weeknight dinner.

Stir in the pork, breaking it up as you go, and cook, stirring, until the pork is browned and in small pieces.
- 3
Add the chili bean sauce, soy sauce, sake, and oyster sauce, stir to combine, lower the heat, and simmer until the mixture thickens slightly, about 3 more minutes.
