Mabo Dofu

Dinner 🍽️Lunch 🥪 Chinese 🇨🇳Japanese 🇯🇵

Mabo Dofu pairs tender tofu with savory ground pork in a gingery, garlicky sauce sparked by chili bean paste for gentle heat. Oyster sauce and soy lend depth and umami, while a splash of sake rounds it out; a shower of green onion brightens each bite. Serve it hot over steamed white rice for a satisfying weeknight dinner.

Mabo Dofu
  1. 1

Heat the sesame oil in a wok or large skillet over medium-high heat, and cook the ginger and garlic, stirring, until the garlic just starts to brown, about 30 seconds.

  2. 2

Stir in the pork, breaking it up as you go, and cook, stirring, until the pork is browned and in small pieces.

  3. 3

Add the chili bean sauce, soy sauce, sake, and oyster sauce, stir to combine, lower the heat, and simmer until the mixture thickens slightly, about 3 more minutes.

  4. 4

Thin the sauce with water as needed (the sauce should not be watery) and gently stir in the tofu.

  5. 5

Simmer until the tofu is hot and coated with sauce, about 10 minutes, stirring a few more times.

  6. 6

Serve sprinkled with chopped green onion.
