Grilled Mango and Chicken Skewers

    In a shallow container, combine the olive oil, ginger root, lemon juice, orange juice, brown sugar, and white sugar. Add the chicken breasts to the mixture, and marinate for at least 30 minutes in the refrigerator.

    Preheat the grill to high heat. Season the chicken with salt, then alternately thread the chicken and mango onto skewers. Discard the marinade.

    Lightly oil the grill grate. Place the skewers on the grill, and cook for 15 minutes, turning to brown on all sides, until the chicken juices run clear.
