Roasted Pork Loin with Maple Glaze

    Preheat the oven to 350 degrees F (175 degrees C). Season the pork roast with salt and pepper, then coat it in flour and shake off the excess.

    Heat oil in a large skillet over medium-high until it begins to smoke. Add the roast and sear in the hot oil until browned on all sides, about 1 minute per side. Move the roast to a large sheet of aluminum foil placed on a baking sheet.

    Mix together the maple syrup, ketchup, water, and garlic. Pour 3/4 of the maple syrup sauce over the pork. Fold the foil around the pork and seal it to make a packet.

    Bake in the preheated oven until the internal temperature is 170 degrees F (75 degrees C), about 2 hours.

    Remove from the oven and carefully open the foil packet. Turn on the broiler and broil the roast for a few minutes until the sauce forms a glaze on the meat. Serve the roast with the remaining sauce.
