Mexican Meatloaf
  1. 1

Preheat the oven to 350 degrees F (175 degrees C).

  2. 2

In a medium bowl, thoroughly mix the ground beef with the taco seasoning; set aside.

  3. 3

In a medium saucepan, warm the refried beans over medium-low heat until fully heated through.

  4. 4

Place the ground beef mixture on a large sheet of foil.

  5. 5

Press the mixture into a square about 1 inch thick.

  6. 6

Spread the refried beans evenly over the top of the flattened beef.

  7. 7

Layer the flour tortillas over the refried beans, trimming the edges to fit the square.

  8. 8

Add salsa and Cheddar cheese in layers on top of the tortillas, keeping 1/2 to 1 inch away from the edges of the square.

  9. 9

Carefully roll the layered beef into a Swiss roll shape, pressing and compacting the loaf as you roll.

  10. 10

    Pinch and seal the edges.

  11. 11

Wrap the loaf in the foil and seal.

  12. 12

Bake in the preheated oven for 40 to 45 minutes, or until the center is no longer pink.

  13. 13

Cut the loaf in half to check for doneness, if needed.
