    Preheat the oven to 325 degrees F (165 degrees C).

    Cut the top off the bread loaf; keep the top in one piece and set it aside for later. Hollow out the loaf to make space for the filling; chop the removed bread for dipping.

    Mix the Cheddar cheese, ham, sour cream, cream cheese, green onions, green chiles, and jalapeños in a bowl; spoon the mixture into the hollowed bread loaf. Place the reserved top on the loaf; wrap the loaf with 2 pieces of aluminum foil.

    Bake in the preheated oven until the filling is heated through and bubbling, about 1 hour 20 minutes.
