Moist Passover Bagel

    Preheat the oven to 375 degrees F (190 degrees C). Lightly coat a baking sheet with cooking spray.

    In a large saucepan, combine water, oil, salt, and sugar and bring to a boil. Remove from heat. Stir in the matzo meal until well mixed; let cool for at least 5 minutes. Add the eggs, 2 at a time, stirring to blend into the dough after each addition.

    With wet hands, shape 2 tablespoons of dough into a ball. Place it on the prepared baking sheet. Repeat with the remaining dough. Make a hole in the center of each ball.

    Bake in the preheated oven until lightly browned, 50 to 60 minutes.
