Mojo Shrimp

    Make the marinade: In a glass or ceramic bowl, whisk together the oil, lime zest and juice, orange zest and juice, garlic, oregano, salt, pepper, and cumin.

    Marinate the shrimp: Add the shrimp to the marinade and toss to coat evenly. Cover the bowl with plastic wrap and marinate in the refrigerator for 1 to 1 1/2 hours.

    Take the shrimp out of the marinade, shaking off any excess. Reserve the marinade.

    Heat oil in a large skillet over medium heat. Add the shrimp and cook until they are bright pink and opaque, 4 to 5 minutes. Transfer the shrimp to a plate.

    Pour the reserved marinade into the skillet. Simmer over medium-low heat until slightly thickened, 5 to 8 minutes. Serve alongside the shrimp.
