    Put the first set of ingredients into the bread machine pan in the order the manufacturer suggests. Choose the DOUGH cycle and press Start. Do not add the olive oil or sesame seeds.

    When the dough cycle ends, take the dough out of the machine and punch it down. Split the dough into two halves and form each into a ball. Flatten the balls to 3/4 inch thick. Set them on a lightly floured baking sheet. Cover with towels and let rise until doubled in size, about 30 minutes.

    Preheat the oven to 400 degrees F (200 degrees C). Brush the tops of each loaf with olive oil and, if desired, sprinkle with sesame seeds. Prick the tops all over with a fork.

    Bake in the preheated oven for 20 to 25 minutes, or until the loaves are golden and sound hollow when tapped. Serve warm or let cool.
