    Combine water and lentils in a saucepan. Bring to a boil. Lower the heat to medium-low, cover, and simmer until the lentils are tender and the liquid is absorbed, about 20 minutes.

    Warm oil in a skillet or tagine over medium-high heat. Cook the onions until browned and translucent, about 5 minutes. Add the garlic, turmeric, coriander, cumin, salt, and pepper, and cook while stirring until fragrant, about 3 minutes. Mix in the cooked lentils, potatoes, crushed tomatoes, sweet potatoes, and carrots. Pour in the vegetable broth; reduce the heat and simmer until the vegetables are tender, about 40 minutes.
