Beef and Mushroom Loaf

    Preheat the oven to 350 degrees F (175 degrees C).

    Reserve six whole mushrooms and finely chop the remaining mushrooms.

    Combine ground beef, minced mushrooms, bread crumbs, onion, ketchup, eggs, salt, and pepper in a mixing bowl until well blended. Spread 1/2 of the mixture in the bottom of a 9x5-inch loaf pan. Press the whole mushrooms into the meat with the stems pointing down. Cover with the remaining meat and gently press to join it with the bottom layer.

    Bake in the preheated oven until the center is no longer pink, about 1 hour and 45 minutes. An instant-read thermometer inserted in the center should reach at least 160 degrees F (70 degrees C).
