Oatmeal Soda Bread bakes into a rustic round with a golden crust and soft, tender crumb. Subtle sweetness from honey and sugar pairs with nutty oats and a hint of tang from sour cream, making it lovely warm with butter or jam at breakfast or alongside soups and stews.

Oatmeal Soda Bread

    Preheat the oven to 375 degrees F (190 degrees C).

    In a large bowl, combine the flour, 1/2 cup oats, salt, baking powder, and baking soda.

    In a separate bowl, mix the sour cream, milk, honey, and sugar. Add this to the flour mixture and stir just until well combined. Stir in the melted butter or margarine.

    Turn the dough onto a lightly sprayed baking sheet. Shape it into a round, slightly mounded circle about 8 inches in diameter. Brush the top of the loaf with melted butter or margarine, sprinkle with the remaining 1 tablespoon oats, and score the top into quarters with a knife.

    Bake for about 40 minutes, or until browned. Cool completely before slicing.
