    Assemble all the ingredients.

    Warm the vegetable oil in a heavy skillet over medium heat. Stir the sugar into the oil with a wooden spoon, stirring constantly, until it turns a light caramel color; this takes about 10 minutes. The mixture will be very hot.

    Stir the onion, salt, and black pepper into the sugar mixture. The onions will begin to caramelize immediately. Stir often over medium heat until the sugar dissolves and the onions are browned, about 15 minutes.

    Add the red wine vinegar to the onion mixture; simmer until it thickens to a jam-like consistency, about 30 minutes. Let it cool before serving.
