Passover Cocoa-Chocolate Chip Meringues
  1. 1

Preheat the oven to 300 degrees F (150 degrees C). Line 2 baking sheets with parchment paper. Sift 1/4 cup sugar, the cocoa, and the salt into a small bowl.

  2. 2

In a large bowl, beat the egg whites with an electric mixer until soft peaks start to form. Gradually mix in the remaining 1/4 cup of sugar and beat until medium-firm peaks develop. Gradually sprinkle in the cocoa mixture and continue beating until the egg whites are stiff. Fold in the chocolate chips. Drop the mixture by rounded teaspoonfuls onto the baking sheets, spacing them about 1 inch apart.

  3. 3

Bake in the preheated oven for 40 minutes for crispy cookies. Cool the cookies on the baking sheets.
